Abstract
Liquid smoke is an environmentally friendly product because it is made from waste fumes from the combustion of charcoal that has been wasted. The presence of liquid smoke will help mitigate environmental impacts from burning pemcemaran addition to providing education to farmers to be able to make value-added products. Liquid smoke is environmentally friendly and has the properties of sustainability because the raw materials are available on a continuous basis and are needed by farmers or fishermen as preservatives in meat / fish. The existence of liquid smoke will provide education to farmers / fishermen to find alternative as a preservative that has been used chemical preservatives (formalin / borax). Opportunities utilization of liquid smoke as a preservative of food is very good future. Excellence is more practical use of liquid smoke, and can produce better quality than using a curing and pickling are not dangerous for health. Especially for areas of West Sumatra Province, the potential development of fisheries. The existence of processing and preservation will maintain price stability so that the farmers' income to be stable and not cause doubts for consumers. Given the considerable potential that the chances of utilization of liquid smoke as a food preservative is quite large and can be used as an alternative substitute for formalin and borak. The purpose of writing this paper is to provide educational information to consumers about the potential use of liquid smoke usefulness as a food preservative formalin and borax substitute that is environmentally friendly
